Peanut Butter and Banana Toasties
It can be hard to find comfort food you can enjoy on a low-GI diet. But, I think we may have found the answer – Peanut butter and banana toasties! This super simple snack takes literally 2 minutes to prepare, tastes great and is good for you. What more can you want?
If you have doubts about eating Peanuts, they have a GI score of just 14 and a GL of 1, making them one of the lowest-scoring GI foods. This low impact on blood sugar levels is one reason why peanuts can be a good snack for people with diabetes.

Ingredients
- 100% peanuts peanut butter
- 1 banana
- 4 slices of low GI wholegrain/ rye/ or multigrain sourdough bread

Method
- Toast the bread
- Spread the peanut butter on one slice of toast
- Slice bananas on top of the peanut butter
- Top with the second slice of toast
- A great snack for the kids with a glass of milk, or lovely with your favourite tea
